Haibane Renmei has the best soundtrack I've ever heard for any anime. It suits the story very well, and it stands well on its own. Friends of mine who don't care for anime enjoy the soundtrack.

A few others that I don't think have been mentioned yet:

Azumanga Daioh has a wonderful soundtrack with universal appeal.

So does Someday's Dreamers.

Mushishi's opening is lame, but the background music throughout is simple and evocative and suits the strange stories very well.

Several of the ones already mentioned, and, of course, One Piece (the original). The Opening and Endings are great ("Kokoro no Chizu!" ^_^ ), and while the background music sometimes seems oddly placed, it's pretty nice (though it wasn't original music, playing "New World Symphony" during the defeat of Crocodile was simply a fantastic scene).

Berserk, oddly enough. The opening and ending songs are some of the worst I've heard, but the background music is really quite good (particularly "Forces"), and very fitting for the mood of the anime.

Gundam Wing: most of the J-pop character themes, all of the classical/synth music that accompanies the battles...
Fullmetal Alchemist: An entrancing, moving soundtrack, and the opening themes grow on you...
Azumanga Dai'oh!: very creative work, quite and extensive use of different instruments, and yet still real; pretty relaxing.

I agree with dreamhacker about Naruto having great music, and Tenshi no Ai about .hack//SIGN and Tsubasa. XD Kajiura Yuki composes the BEST anime music I have ever heard! The music in Tsubasa is always really fitting for the scenes. XD

EDIT: *notes that she forgot the composer of the music of one of her favorite series* Rurouni Kenshin has some really great and fitting music (in my opinion), too. Kenshin's and Sanosuke's theme songs totally fit them! Noriyuki Asakura is a great composer. XD

Kenshin... especially the violin themes for the Kyoto arc^^

Ooo, yeah, I agree! I loved the music in the Kyoto arc, it was all very well done, and I liked it much better than the music in the first arc (though there were pieces in the first arc that I loved). :thumb:
