And gluons are the particles that keep protons and neutrons bound in atoms. Without gluons all atoms would literally fly apart.

I thought it was the strong nuclear force that did that....

The nuclear strong force is a complex process and that name was given it before we completely understood how it worked. Gluons are one type of particle involved in this process. Beyond that, I'm afraid I'm not qualified to discuss how they work. If you're curious, the Wikipedia article seems good to me (and references a bit of the experimental verification for their existence):
